I am proud to announce......
that I now know how to spell Zucchini correctly!!
(Phew! I just double checked with Google before I got too conceited!)
It all started with one.
One zucchini given to me by a friend. He asked me, "Have you ever made zucchini bread? Do you want this?" I replied, "Sure! I've never made it but I'll try it!!"
I made one loaf of bread and it was great!! We all loved it! The kids ate it all up!
Then, I still had enough zucchini left to make about 4 more loaves of bread. I called my sister and said, "Hey! Do you want some zucchini bread?" She quickly answered, "No. I mean..is it good??!!" I laughed and said, "YES! It doesn't even taste like a vegetable bread! I have two loaves coming out of the oven, I'll bring them by! Your kids will love it too!"
This is all still from one rather large zucchini.

I stopped by the store on the way to my sister's house to pick up ingredients for a restaurant quality amazing cream cheese frosting for her & my loaves (because I had two more loaves cooking in the oven still!) and dropped off some bread to her. We came home just in time to take our loaves out of the oven for a snack for Movie Night at our house! Mmmm it was so good!
Oh- and to give you some closure...my sister and her family loved the bread! =)
The next day I went to work and told a co-worker that I made some zucchini bread for the first time. She said, "OOohhh! I have some zucchinis at home! Can I bring them to you and you can make ME some bread?" "Uh....ok...I need some flour....but, yeah, ok...." (Why did I say anything?!)
So, the next day she brings me 3 zucchinis and some flour. She told me I could keep 1/2 of the amount of loaves it makes. So I made four loaves and gave her two and kept two. Why only four loaves you ask? Well, first of all, one of those three zucchinis actually was a cucumber. LOL! And the other two were smaller zucchinis. But, amazing bread- again!
Then.....my Mom heard I was baking bread. You'll never guess what she gave me. Go ahead... guess. Wow. You are good. Yup- a zucchini made on steroids. It is the biggest zucchini I have ever seen in my life.
My friend who cursed me with this zucchini roller coaster ride, gave me another zucchini, and then I got 3 more from the zucchini gods. Seriously I have about six zucchinis in my fridge right now!
Now do you see why I have learned how to spell z-u-c-c-h-i-n-i ?
Is there two c's? Two n's? How do you spell it? Ooohh pick me ! pick me! I know how to spell it BECAUSE I'VE DONE NOTHING BUT LOOK FOR NEW RECIPE'S AND COOK WITH IT FOR THE PAST TWO WEEKS! THAT'S WHY!!
Now, I'm not upset I have been this blessed with the big green vegetables. I'm extremely thankful! I have some delicious bread in my freezer. I found a great recipe for zucchini/carrot/raisin muffins that I made last week! The kids really liked them....after they picked out all the raisins however! In fact, I just bought 5 lbs of carrots this weekend so I can make some more muffins for my freezer! (by the way, the recipe makes about 6 muffins. I got 9 out of my recipe however.)
Another item on our menu this week is zucchini pizza's! Thank you Pinterest!
And lastly, I'm going to cut some up and freeze it so I'll have some ready for stir-fry.
So, long story short. It was one zucchini. One zucchini that taught me how to make zucchini bread for the first time. I was able to share the warm bread with others, make my kids happy with muffins, and put some in the freezer. And...most importantly... I could win the spelling bee if the final word came down to:
